Responsible Farming Practices

We’ve forged meaningful partnerships with trusted farmers and growers. Macken Brothers Butchery supplies us with high-quality, naturally fed meat from farms across England, Scotland, Wales, and Ireland. The meat is aged on their premises, ensuring it reaches the perfect level of tenderness and flavour before we prepare it for our guests. We understand the significance of provenance and animal welfare and guarantee full traceability from the farm to your fork.

We are committed to minimising food waste through meticulous planning, portion control, and creative ingredient use. This approach not only reduces carbon emissions but also supports a more sustainable food system.

Seasonal and Fresh Produce

Our menus revolve around the availability of seasonal and fresh ingredients, ensuring that every dish reflects the best of the changing seasons. For instance, all our berries are sourced from Hugh Lowe Farms in Kent, the Garden of England. These berries are cultivated, handpicked, and packed directly at the farm before making their way to our restaurant. Our Group Executive Chef, Trevor Tobin, recently visited the farm to immerse himself in the art of plantsmanship and witness the cutting-edge technology behind the growth of these exceptional berries.
